26/99: Chocolate Feather Bed
I've been looking forward to this cake for quite a long time. The picture in Rose's book looks absolutely divine.
Note to the taste tester or the interested baker: this cake can give you a heart attack. Oh my goodness. Here's the chocolate that was just in the ganache:

22/99: Génoise Rose
I woke up this morning before my alarm. I stirred in bed, thinking that I was so glad that I did not have to get up yet. Ah, sleep. It feels so good.
Wait, it actually feels too good. I shouldn’t feel this good at 6:30 am in June. I grabbed my phone and looked at the time. 8:19. Ah.

13/99: Génoise Très Café
Hello again faithful readers. As you have probably noticed, it is Monday and there have been zero posts this week and, as you know, there are supposed to be TWO. What's going on?
Basically a bad baking week. First I moved from Chattanooga to Oxford, MS which took a few days and then I came back home to my parent's house for a few days and cooking in a different kitchen just throws me off. But as I am home, I had lots of time so I decided to be overly ambitious and make a croquembouche. Fellow bakers online gave me warnings. They said get ready to cry. Get ready to cuss. Get ready to burn your fingers with the caramel and have blisters all over your hands. Of course my head was too big and I tried it anyway. It's not in the book but let's just say that I'm not going to post any pictures of it. I blame the Mississippi humidity.

4/99: Chocolate Génoise with Peanut Butter Whipped Ganache
Sometimes it's just time to start over.
Tonight was one of those nights where it was definitely time to start over. I started baking around 11 when I finally had some time. But sometimes life happens when you don't expect it and it just throws everything off. I don't mind my emotions getting a little out of wack but when it affects my baking then that is just not acceptable.
