Mary Lindsey is MARRIED!!!! <br />

Mary Lindsey and I have been friends since we were little girls at Highlands Presbyterian Church. We went through many VBS's, RYM trips, church lock ins, and so many other events together. She is a beloved friend, and I was absolutely THRILLED and honored when she asked me to her wedding cake (and groom's cake!!). <br />
<br />
Mary Lindsey and Troy ordered the bobble heads for the wedding cake topper which turned out to be adorable. <br />
<br />
For the cake she gave me some pictures that she liked and said that she wanted it to be pretty simple. The product was a 4 tiered lemon almond cake with grooved, lined sides, and a smooth top. The icing is a cream cheese icing inspired by Rose Levy Beranbaum, though I added my own touch as well. Mine is much sweeter (we are Southerners!!) and more fluffy.<br />
<br />
I made an extra cake top tier for Mary Lindsey so that they could serve the entire cake at the wedding. I told the server that she was allowed to cut the top tier since we had an extra, but I swear she thought I was crazy. I don't think she believed that I actually made the wedding cake. In the end though, I believe the whole cake was gone. <br />
<br />The evening was enchanting. I am so happy for Mary Lindsey and Troy and wish them a life time of happiness!! <br />

This groom's cake was for Troy Jackson, the groom of one of my childhood friends Mary Lindsey. Troy and Mary Lindsay are both Jackson, Mississippi natives so the Mississippi shaped groom's cake was perfect!<br />
<br />
This cake is a three tier, dark chocolate cake with a raspberry ganache icing. I don't know if you can tell in the picture, but the cake was HUGE. Getting it to the venue was quite the experience and took multiple helpers (I'm so thankful for my friends and family who helped out!!).<br />
<br />

My roommate Katherine recently came home with the largest box of blueberries that I've ever seen from the farmer's market. We still had a box of blueberries in the refrigerator, so she said to use them up however we wanted to. Of course my mind immediately goes into action... cake, cobbler, pie?<br />

The final decision was a nice summer blueberry pie. I was going to go to the grocery store to pick up a Pillsbury pie crust for the sake of simplicity, but I am currently on a budget so I decided to open up the pantry and put in a few more minutes of work. The Mississippi humidity is always a little intimidating when making pastry but I decided to give it a go nonetheless.<br />
<br />
The result was fantastic. I took it to my parent's house for father's day and the pie was gone within 15 minutes. I had several people say it was the best blueberry pie they've ever had so I'm counting it as a success.<br />
<br />

I adapted the blueberry pie recipe from <a href="http://allrecipes.com/recipe/blueberry-pie/">allrecipes.com</a>. I read through the comments and took some suggestions here and there. I think that next time I make the pie, I will add a tablespoon of flour, but the juiciness of the filling also made it taste great. If you're looking for a good blueberry pie recipe, give this one a test run! You won't be disappointed:<br />

<b>Pie Crust:</b><br />
<br />
1 1/4 c flour<br />
1/2 c butter, chilled and diced<br />
1/4 c ice water<br />
1/4 tsp. salt<br />
<ol>

bowl, combine flour and salt. Cut in butter until mixture resembles
coarse crumbs. Stir in water, a tablespoon at a time, until mixture
forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight. </span></li>
<li><span class="plaincharacterwrap break">Roll dough
out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough
evenly into the bottom and sides of the pie plate.</span></li>

My baby niece Brooke turned one several weeks ago!! It was interesting for all of us to see a very practical demonstration of how different parenting is for a third child than for a first child.<br />
When Jane Bradley turned 1, the whole world knew about it. Lacey hand delivered invitations to her friends that were inside rubber duckies. There were rubber duckies in the pool and hanging from the trees and just about anywhere else you could think of. Lacey didn't miss a beat in making sure that it was the party of the century (aside from her wedding of course). <br />
<br />
But about 6 years later Brooke came along as the third child. This time the party was more intimate. People didn't get rubber ducky invitations but the house was filled with laughter of kids from the neighborhood and family who gathered to celebrate Brooke. It was a really sweet day-- even sweeter for Brooke when she discovered how much cake she could eat!<br />

In true first-birthday fashion though I made Brooke her own rubber ducky cake. I found a very sweet white birthday cake recipe from Irma in the Joy of Cooking so that the kids would be happy and on a sugar high (sorry parents!). I made the ducks out of pound cake though so that they retained their structure. It felt great to have all of my tools out--I think I'm starting to pick up my cake baking fire again. I guess after about a year of burn out it might be about time?<br />

This cake is exciting for several reasons:</div>

1. This cake marks the 50th anniversary of our dear
friends Les and Kay. Les had called me several months in advance to
book the cake for the event. After having discussions with family over what type of cake to make, I
received a photo of their original cake from their daughter and set out to replicate it.</div>

2. It means that I have exceeded the original number of Rose's cakes that I committed to making. Granted this cake was not made within the same year of the other 99 but I certainly feel like a disciple of Rose. When you make 100 of someone's recipes, it shows commitment. </div>

<a name='more'></a>I chose Rose's Golden Dream Wedding Cake which is an almond lemon butter cake but I altered the icing to my liking. The original icing was quite yellow (the cake in the picture appears yellow becuase of the lighting/camera but it was actually off white) so I created my own white chocolate recipe. In the beginning it was a disaster as the white chocolate kept hardening on me. I bought some icing cans as back up but thankfully I didn't need them! With a few adjustments, the icing turned out in its consistency and taste!<br />

The evening was a blast. The house was packed with family and friends (well over 100 guests to celebrate the couple!) and a band entertained us outside.<br />

The only strange part about it was in the ganache: instead of using creme fraiche and heavy cream, you could substitute sour cream. Of course that's what I did because creme fraiche is too expensive and it turned out to be fantastic. I actually almost like ganache better that way. It also called for some creme de cassis and vanilla to have an extra little zest of flavor. Yum. I can't wait to taste it tomorrow!<br />
<br />
And then it was picture time-- for the last cake. It was a poetic moment- the sun setting in the distance creating a "heavenly" atmosphere with my cake reflecting the golden sun beams. <br />

For some reason the ganache got to me though. I didn't have creme fraiche so I just doubled up on heavy cream thinking that every single ganache I've made for rose is made entirely of heavy cream so substituting could not be a bad thing.<br />

Wrong.<br />

It never thickened. <br />
<br />
So at 10 pm after trying to doctor it up, I dashed to wal-mart to buy some new ingredients to make a different ganache.<br />
<br />
As you could tell it ended up working- and honestly if that's the only thing that went wrong today in the 7 cake marathon then I'm doing pretty good.<br />

I've never heard of a marionberry before. I went to good ole' Kroger with Marionberry on my list and didn't even ask the grocer what it was. I guarantee you that 99 out of 100 people in Jackson, Miss won't know what a marionberry is.<br />

Well friends, I just looked. Apparently its a type of blackberry. I don't know why Rose couldn't just say <i>blackberry.</i> Wikipedia deems the Marionberry "the Cabernet of blackberries." I'm not really sure what that's supposed to mean either though. Cabernet is just another type of grape used when making wine. As far as I know, its not any better than a merlot grape. Maybe this is where I start sounding like I'm from Mississippi? <br />

The cake includes the actual cake (called the biscuit roulade), Lekvar, apricot syrup, apricot ganache filling, and lacquer glaze. The apricot comes in from the apricot brandy that's used in almost everything as well as the dried apricots in the Lekvar.</div>

But the lekvar was optional and the liquor store didn't carry apricot brandy. Basically, my chocolate apricot roll was not going to have any apricot in it.</div>

Yesterday as I was driving home, I was flipping through the radio and stopped when I heard something about vanilla beans. They said that ice cream prices would most likely go up this summer because there was some vanilla bean crisis so now they cost a lot more. I've been trying to figure out what the vanilla bean crisis is this year so if you know then pass along the info. I thought it was really strange...<br />

This is cake 2 in the weekend marathon! My original plan was to stay up tonight and do 4 but I think it might just be a Saturday marathon with 7 cakes. I'll need all the sleep I can get tonight...<br />

I've been looking forward to Miette's Tomboy for quite awhile because apparently it's one of the best in the book. The recipe is really strange though and did not seem like typical Rose.<br />

First you start off by pouring boiling water on top of 70% chocolate. This is strange because for every other cake I've done like this, I've poured the boiling water over cocoa powder. Plus the fact that it's 70% and not the normal 60-62% chocolate that every other recipe calls for. Just so you know, I bought a little under 2 pounds of the 60% chocolate today to cover me for the next seven cakes...it's going to be a long weekend haha.<br />

The next step was strange too: make a meringue and then pour oil, milk and the watery-chocolate mixture into it. I looked at it and thought for sure I did something wrong. <br />

Next is icing time! For some reason, Rose seemed to be freaking out over the temperature of the icing and how you have to measure it at each stage and yada yada ya... I can't find my instant read thermometer so I decided to live on the edge and do it without.<br />

So first: caramel. my favorite thing ever. It actually turned out just fine even without a thermometer. Then you whip up the egg whites and finally pour the hot caramel into the meringue in order to stabilize it. <br />

And voila! Mousseline! I decided to add some seedless raspberry jam to mine to give it an extra kick (a variation suggestion in the book). It actually turned out quite nicely and was really pretty as a result. Of course I did add a bit of food coloring to make the color more vibrant.<br />

I tried the cake after it had been in the refrigerator for awhile and i think it needed to be at room tempurature. It was good but not exceptional as I was expecting. It almost had a brownie like consistency. Time is ticking. Has anyone else noticed the clock on the right side of the page? Just in case you didn't, it says THIRTEEN DAYS! AAH!!!!!<br />

So 9 cakes to bake in 13 days. And I'm taking 18 hours of upper level classes this semester with tests coming up in almost all of them. And believe it or not I do have a social life. Again, AAHHH!!!<br />
<br />
So the question is, am I going to finish on time? Should I extend the deadline to remove the stress or still shoot for it?<br />

For some reason I really want to finish on time. I've worked so hard on this all year long and I want to reach the goal that I set for myself. And honestly, it's only 9 cakes.<br />
<br />
But then again, it's 9 whole cakes. that's 10% of the project. I really enjoy baking but I don't want these 9 cakes to be absolutely miserable because I'm trying to whip them out really quickly. I would have to have a baking marathon this weekend and Easter weekend in order to finish.<br />

So thoughts anyone? Should I try to finish on time or extend the deadline?<br />

This cake was good but I think it could have been better. I made the cakes two days ago and stuck them in the fridge because I didn't have time to finish them then. I think that was a bad idea because it was tough and didn't soak up the syrup when I finally brushed it on there.<br />
<br />
The cakes themselves are sponge cakes. Once they cool, you cut out a cavity in the top, brush it with syrup, coat it with a glaze, fill it with chocolate cream, and then drizzle chocolate glaze on top. The recipe calls for apricot glaze but I didn't have any apricot jelly so I substituted raspberry. As a result I made the syrup with Chambord and then added some Chambord to the glaze too.<br />

Maybe in a couple months I'll re-make this one and see if I like it better when its completely fresh.<br />

The weather in Oxford has been amazing this week (minus a bit of pollen and a day of rainfall) so a bunch of friends came over to sit on the trampoline this afternoon. I brought out the banana refrigerator cake that I made last night and it was absolutely perfect for the sunny afternoon.<br />

When the girls left, Allie paused, looked at me, and then closed her eyes. I looked at her funny and asked her what's up? This is what she said: "It had perfect moisture and it was consistent. The banana was not overwhelming. It's like taking a childhood memory and putting a cheesecake on top!" Haha great quote for the blog.<br />
<br />
Everyone else seemed to really like it too. And it was really easy- just throw a couple bananas in a food processor with a few other ingredients.<br />
<br />
I did have one minor set back. I ran out of turbinado sugar last week so I bought a new box of it. The cake called for 170 grams (a little over 3/4 cup). I opened the box up to pour the sugar in but lo and behold, i made a mistake when buying it. Instead of buying a box of sugar, I bought a box of sugar packets. Each packet contained about 5 grams of sugar so I was tearing packets open for awhile.<br />

When I was in kindergarten, I had a friend named Anna who had a Pocahontas birthday party. I got an invitation and was so excited because it was a dress up party and that meant that I could wear my favorite dress--my Pocahontas dress. My mom was concerned that Anna was supposed to be the only Pocahontas so of course she called Anna's mom just to check. Her mom was so sweet and assured her that it would be just fine! We're good ol' Mississippi folk down here- no one would never say no to a kid wearing a Pocahontas dress. I happily wore my Pocahontas dress and life went on just fine.<br />

This year when I transferred to Ole Miss, I came in contact with Anna again! We hadn't seen each other for a long time so it was fun to catch up. A couple of months ago a big group of us decided to go out to dinner and Anna mentioned something about the Pocahontas party. I didn't remember it at all so I asked her about it. As soon as she started telling the story, a lot of people at the table started laughing because they had already heard it before. Long story short, Anna was devastated because she wasn't the only Pocahontas at her Pocahontas birthday party. Oops.<br />

Since we're all seniors and graduating (well some of us anyway), we're trying to celebrate when our friends get jobs. Anna recently got a job in Texas that we are all super excited about so we had a surprise congratulations party-- the theme: Pocahontas. I made a Pocahontas costume and then served the cheesecake!!<br />
<br />
It was a really easy cheesecake to make. I decided to buy ladyfingers for the crust since I had already made them before. You just mix a pound of cream cheese in a mixer with a few other things and then pour it in the pan. Done.<br />

It went over really well at the party! Compliments all around. I used blackberries instead of cranberries because they didn't carry those in the freezer sections. I think it was a good switch.<br />

My time is ticking so that means I have cake sitting around all the time with the push to get the made. As a result I halved the recipe for the devil's food cake. It was a delicious cake but I am really glad that I halved it because, like I said, I feel like I have cake pouring out of my house.<br />
<br />
I didn't have any dried sour cherries or cognac so I decided to add some Chambord to the ganache instead of the cherry cognac. It was a good decision.<br />
<br />
This cake, second to the <a href="http://www.thesugarwaltz.com/2011/06/2699-chocolate-feather-bed.html">Chocolate Feather Bed</a>, is one of the most chocolatey cake in the book. it has 99% cacao chocolate as well as cocoa powder with some light brown sugar and sour cream. The cake itself is moist and thickly chocolatey while the ganache tastes like chocolate fudge. Yum!<br />
<br />
Everyone in my life now seems to be on a diet so I ended up throwing the leftovers away this afternoon. I just realized that I should brought some to my friend Kesha (shout out to her for her faithful blog reading) but too late. Maybe next time!<br />

I'm almost down to the single digits in the cakes! I can't believe I've made it this far. I REALLY want to finish on time but its definitely going to be a push...<br />

I started to make these almost every day this week but it didn't actually work out until last night. It's been an incredibly busy week with midterms but I did well and now they are behind me! Hooray!<br />

But the most exciting new is that my strawberries flowered and my tulips are about to bloom!!! No lie. I haven't killed them and so it's time to celebrate.<br />

These had several steps because you had to make the biscuit base from the <a href="http://www.thesugarwaltz.com/2011/04/799-apple-caramel-charlotte.html">Apple Caramel Charlotte</a>. I can't believe its been almost a year since I made that Charlotte. It gave me a little flashback.<br />

This part of the Charlotte was the easy part (the rest was a nightmare). You just whip up the batter and pour it into a baking sheet. <br />

Then they were ready for the oven! For some reason I couldn't find what temperature to bake them on in the book... maybe it was a typo or maybe I wasn't looking in the right place? The biscuit baked at 450 so I thought maybe Rose wanted me to just keep that temperature. That also seemed really high because most cakes are in the 350 range so I compromised and baked them at 400. It worked out pretty well.<br />

The lemon cheesecakes were really creamy and pretty. They are perfect for summer (maybe it was a little too early in the year for me to make them?). I am not a huge fan of lemon though so I thought they were possibly a little too strong. Liz tasted it and thought the same thing. I still have a lot of them in my fridge so we'll see what other friends think when they grab one.<br />

Out of all of the crazy things that I have done for this little baking adventure of mine, I think quail eggs makes the top ten. Usually its just me annoying the grocery store workers with some crazy request or complaining to the manager that they don't carry castor sugar, muscovado sugar, etc. <br />

But honestly, who orders quail eggs? But then I guess another fair question is who decides to bake 99 cakes in a year? Oh yeah, that's me.<br />

The quail eggs came in today so I decided to put of studying for an hour and make the cake. It only has eight ingredients: quail egg yolks, heavy cream, vanilla extract, flour, sugar, baking powder, salt, and butter. <br />

But as soon as I started cracking eggs, Elizabeth burst in the front door and exclaims, "guess what!??!? I found a dog!!!"<br />

My other roommate Elise's response was, "I'm sorry.. what?"<br />
<br />
Liz said she was just driving up our street and found this beautiful dog trotting along with the leash still attached to the collar. She went to all of the surrounding streets to ask if anyone knew the dog. No luck.<br />

So cake making interrupted, we both hopped in the car to go knock on doors. No luck. I think I scared one lady at the park- she didn't seem too pleased to be spoken to by a stranger.<br />

So with the dog tied up in our yard (we are planning on making signs) I continued with the baking.<br />

I start with the quail eggs. Rose said that the shells are really hard so if you use them a lot you need to buy a quail egg decapitator from France. After reading that I was really intimidated by this whole egg cracking ordeal. I envisioned it to be like cracking a coconut since you need a whole decapitator. She said to get a sharp knife and make a crack in the shell. <br />

Apparently I misunderstood what she meant by this warning because I ended up with a mess and egg white all over my shirt. What she really meant is that underneath the shell is a thick sticky membrane. I think that you are supposed to delicately cut the membrane once peeling off the shell. Oops. I ended up just tearing it open with my hands after the knife thing went wrong. It was an absolute mess.<br />
<br />
Meanwhile, I started to hear some barking and lots of screaming. I began to imagine that the dog bit Elizabeth and that she is bleeding to death outside or that the dog itself was dying of some horrible attack. I threw the eggs down and ran outside to the rescue. <br />

What's actually going on is that the dog got loose from its leash and Liz was outside in a towel, wet from being straight out of the shower, running around trying to catch the thing. It was hilarious. I really have no idea how he untied himself because this is what we used to tie the leash up:<br />

When I finished I realized that I didn't have the right pan. It seemed to be really important too because it didn't make very much batter... I think it would have made a cookie if I used an 8" pan. She said to use a heart shaped pan or a 6x2 round. I didn't have either of those but I did have the spherical pan that was 6 inches wide that I used for the booty cake. I decided that would have to work.<br />

When I finally got it out of the oven it smelled really great. It stood for 10 minutes and then I carefully put it on the greased cooling rack.<br />

I was in a hurry because I was trying to get back to studying since the whole dog thing pushed my day back a little bit. Here's my fatal mistake: I wasn't careful when I moved the cooling rack.... Can you guess what happened?<br />

I looked at it in disbelief. Not only did I actually order quail eggs for this cake but it took up valuable study time. And then it ended up in a lump on the stove. <br />

I found a part of it that was salvageable, cut a slice, and stuck it on a plate. Viola. One piece is still good. <br />

I ate that piece and, confession, I ate most of the rest too. <br />
<br />
Rose said, "this cake is melt in your mouth moist and buttery with an exceptionally velvety-fine crumb and crispy crunchy top crust." I think I have to agree with her description. But at the same time, that description might give it a little too much praise. It was great but it wasn't that much better than a normal cake.<br />

Liz said she liked it but it really freaked her out that it had quail eggs in it. Love it.<br />

I get in these phases where I think I can do anything. One day its making 99 cakes in a year, another its cheese making, and the next its gardening. <br />
<br />
So for I'm 1 for 2 in the cakes/cheese making ventures but hopefully this venture will up my record. I planted a few seeds about a month ago (basil, mint, and parsley) and they finally started sprouting in the past few weeks. It was incredibly exciting to discover that I didn't kill them and that they could actually grow. <br />

So then my plans expanded to flowers, fruits, and vegetables. You name it and I wanted to grow it (well maybe not weed). This past weekend, I got sick of studying, drove to Walmart, and now my patio is covered with flower pots.<br />

So here's what I have going on now:<br />

Pretty impressive, right? But keep in mind that I have absolutely no idea what I'm doing.<br />

I've heard that my grandmother on my Dad's side used to have an excellent green thumb and was great friends with and inspired by the lady who planted Mynelle Gardens in Jackson. Apparently Mynelle's entire yard was filled with daylilies and a dozen other types of flowers. She sounds pretty hardcore because she even had a greenhouse in the yard. My grandmother gardened with her and apparently had tons of daylilies in her own yard; she also cross pollinated them and named the new ones as she went along. I called my dad to ask him about it and he said her garden was beautiful. I would love to have seen it. I wonder if it looked anything like her friend Mynelle's. For those of you who haven't been to Mynelle Gardens, this is what it looks like:<br />

When she died my dad dug up all of her beautiful daylilies and re-planted them at our house. They're still there today and that was over twenty something years ago.<br />

But I'm not sure if having a green thumb is hereditary and if it is, I'm almost positive that I didn't get the gene. The only thing I've ever kept alive long term is my aloe plant that my roommate and I bought freshman year of college and named Vera. Vera's still doing well and comes to my rescue whenever I get a sunburn. <br />

When it comes out of the oven, the recipe gets a bit peculiar. I had to put the cake upside down on a wire rack elevated about 4 inches or higher above the work surface. It had to cool there for an hour before I could see the results. <br />

If you can't tell there is a CRATER in the middle of the cake plus the fact that the whole thing leans right. Rose said "don't worry if it dips slightly at the top" but I don't think this is slight dipping. The final cake looked just fine and it tasted alright too. It wasn't our favorite, especially with the <a href="http://www.thesugarwaltz.com/2012/02/8199-golden-lemon-almond-cake.html">lemon almond cake</a> sitting right next to it. It doesn't stand out. It's not that it's not good but I just don't think its worth the calories.<br />

I feel really behind on my cakes.<br />

After this one, I have another one that I haven't posted yet so that means I have 16 cakes to make in the next 48 days. I'm getting a little worried because I'll be gone for spring break and I have midterms coming up. But I am going to make it. I am determined. I set a goal and I am going to meet it- no extension or exceptions.<br />

I think my problem is that I'm getting a little sick of it. I absolutely love it when I'm doing it but I think it's the planning part that I don't like- grocery store trips, prepping, mixing, baking, cooling, cleaning, photographing, blogging. Add that to 18 hours of upper level courses and my to do list gets pretty long. But i'll stop complaining... no one wants to hear that. On to the cake:<br />

The golden lemon almond cake was delicious and easy enough. I had to make a few substitutions because I didn't want to go to the grocery store.<br />
<br />
1. It called for lemon zest and I only had oranges so it has a little orange under taste.<br />
<br />
2. I ran out of turbinado sugar so for the syrup had to use brown sugar.<br />
<br />
3. I didn't have lemon oil so I used walnut oil since it was a nutty cake anyway. <br />
<br />
I don't know what it was supposed to taste like but the result was fantastic. Rose said that she wraps hers up and gives them out as Christmas gifts and I don't blame her. The cake was incredibly moist which Rose says is compliments of the ground almonds.<br />

We were definitely <i>that</i> table on Valentines night with eleven girls making all the noise. I didn't realize how many people were such big fans of raspberries. </div><div class="separator" style="clear: both; text-align: left;">On the flip side, I did think that it was a bit dry in the middle. To make the cake you have to poke holes all through it and then pour chocolate ganache into it so that it gains the extra moisture.
