31/99: Two Fat Cats Whoopie Pie


I feel really behind on the baking challenge since it's been about a week since I've made anything.  This week has just been super busy with school so the cakes got pushed behind. But here I am, back on track.

I decided on the whoopie pie, mainly because it seemed easy and didn't have a huge yield. It didn't take long at all which was fantastic.
 

Basically, you just mix up the egg, brown sugar, canola oil, and butter. 


Then you add in the chocolate (60%)


 Then you add your dry ingredients and put them on a greased baking sheet.  It feels like you're making cookies.


Once they come out, they are super fluffy and kind of cute!


To make the marshmallow cream, you basically just make a sugar syrup and a meringue and then combine them. You bring the  sugar, corn syrup, and water to a firm ball stage (248-250).  Once it's to the right temperature, you add it to the meringue and then add some butter.  


I think I actually messed this part up a little because my butter wasn't quite as soft as it should have been. It had been sitting out for awhile but the core of it was still a little cold which made my final product lumpy.

The rest is easy. If you can make a PB and J, you can assemble these little guys. Plop some of the cream on a pie half and then put the other half on top.

I thought they were really tasty. I really liked the consistency of the pie- it was much more dense than a typical cake and almost had a fluffy brownie feel.  They were kind of big though. I think next time I will half each pie and make mini ones.  After eating one, I felt completely bloated.

    And thanks to the compliment on the cake stand too! I've been doing some antique shopping and i found it for EIGHT dollars! I couldn't believe it.

  4. Looks nice Jane! And great cake stand too! When I made this, I only put 20 gr dollup instead of 40 grams in the recipe.
